Made from 100% Grillo (a local grape that’s a cross between Catarratto and Zibibbo), Cavallo delle Fate shows off the sunny charm of Sicily with a cool, mineral edge thanks to the higher-altitude vineyards at the estate.
Think crisp green apple, zesty citrus, and a touch of salty sea breeze, all wrapped up in a clean, chalky finish. It’s fermented and aged in stainless steel to keep things bright and pure.
No oak here, just straight-up freshness.

Crisp orchard fruits and hints of sour melon are guided by brisk acidity. It leaves the palate perfectly refreshed with a crunchy staining of minerality and a chalky sensation that slowly fades. This possesses a wonderful cool-toned character imparted by the elevations and microclimate of the Regaleali estate."
