A superb gin from a boutique producer in the Wakayama province of Japan. The special flavour in this gorgeous gin derives from the kōyamaki or Japanese umbrella pine tree. The word "kozue" refers to the treetop or the tip of a branch - from which the distinctive umbrella-shaped pine needles are sourced for infusion with the Japanese pepper and more conventional citrus ingredients.
