A beautifully balanced Hawke’s Bay blend, The Aviatrix brings together 51% semillon and 49% sauvignon blanc in perfect harmony. Hand-picked and whole-bunch pressed, the wine is crafted with minimal intervention, fermented in seasoned French oak puncheons using only free-run and light press juice to preserve purity and texture.
The nose opens with vibrant citrus zest and delicate herbal notes, layered with a subtle lift of tropical passionfruit. On the palate, it’s richly textural yet refreshingly dry, where sauvignon blanc’s bright acidity and citrus drive are seamlessly complemented by semillon’s softness, body, and hints of lime, honey, and stone fruit.
