Bayside’s first release, Three Moons Rum, is a uniquely Kiwi take on craft rum. Distilled from 100% blackstrap molasses and fermented with a kumara starter, it’s twice distilled in a locally made pot still - a process that captures layers of fruit and spice before a short rest in ex-Pinot Noir barrels.
The result is a lively, characterful rum. Freshly distilled notes of golden kiwifruit, honey, pear, and citrus evolve into deeper flavours of cooked red fruit, Christmas spice, and a subtle tang of apple cider vinegar after its barrel rest. Bold, experimental, and distinctly New Zealand, it’s an exciting debut from Bayside Rum Co.
