Poderi Cellario Dolcetto is a fresh, vibrant red made with a nod to tradition. Made by third-generation winemakers Fausto and Cinzia Cellario in Carrù, southern Langhe, using organic farming and a low-intervention approach. Hand-harvested grapes undergo semi-carbonic maceration, mimicking old-school foot-stomping methods to create a light, fruity, and expressive wine. Fermented with wild yeasts and aged in cement and stainless steel, it's unfiltered, unfined, and bottled with minimal sulphur.
Expect bright red berry and violet aromatics, with flavours of plum, blueberry, dried herbs, and a savoury, mineral edge. Light to medium-bodied, with fresh acidity and a gentle tannin structure, it’s best enjoyed slightly chilled. A fun, approachable take on Dolcetto that’s great value.
