Sourced from partner vineyards in Jerez, grown on classic Albariza soils and picked early for freshness, this Manzanilla is all about purity and precision. Made from the first pressing, the base wine is deliberately neutral before being fortified and aged under flor in American oak casks through the traditional Solera system in Sanlúcar de Barrameda. Only a small portion is drawn each year, resulting in an average age of around three years.
Pale straw in colour, the nose is tangy, yeasty and distinctly saline. Lighter and crisper than Fino, the palate opens with soft apple and citrus, then builds into savoury, nutty complexity, finishing with a refreshing hit of sea-spray salinity.
