Zen is Tony Bish’s flagship – his purest expression of Chardonnay, and in 2018, he absolutely nailed it. Sourced from dry-farmed Skeetfield fruit and raised entirely in a Taransaud French oak Ovum (the only one in NZ), this is unfined, unfiltered, and utterly uncompromising.
The nose is beautifully subtle – mealy citrus, a touch of spice and mineral lift. On the palate, it’s all texture and poise: bright, saline-edged citrus with fine-grained structure, layers of lemon, grapefruit, and gentle richness weaving through every sip.
Profoundly balanced. Incredibly detailed. A true collector’s piece in majestic magnum format.
Very limited. One for the cellar – or the centre of the table.
